๐บ๐ธ I was in a mood for a crispy honey sesame chicken… had almost everything in the house so just went down to fetch some chicken from the grocery shop. I never made this before but it’s a dish I remember having in Sydney at the Macquarie Centre Mall (ok this dates back to 2006 ๐ฑ).
I though of the sweet and sour chicken I made not too long ago and decided to use that as a base for my dish.
INGREDIENTS for two
(ingredients to ajust accordingly to your liking/variety)
For the chicken
– 344g chicken breast filets cut from Monoprix
– 3 spring onions (as I did not have onions… if not use onions and a spring onion for decoration)
– 5 garlic cloves (normally less would do… I was counteracting on my lack of onions)
– sesame seeds (I had white) I put a loadful without measuring
– a few bird eye dried chilis (i put in 3 justโฆ)
For the batter
– 3 tablespoons all purpose flour
– 1/4 teaspoon baking powder
– 1/4 salt
– 1 egg white
– 5 tablespoons water
– 2 teaspoons sugar
– 1 teaspoon cornstarch
– 2 teaspoons sesame oil
– a pinch of pepper powder
For the batter
– 3 tablespoons all purpose flour
– 1/4 teaspoon baking powder
– 1/4 salt
– 1 egg white
– 5 tablespoons water
– 2 teaspoons sugar
– 1 teaspoon cornstarch
– 2 teaspoons sesame oil
– a pinch of pepper powder
For the sauce
– 50ml ketchup
– 30ml honey
– 20ml soy sauce (reduced in salt)
– 1 tablespoon brown sugar
– 1 tablespoon rice vinigar
– 1 tablespoon sesame oil
HOW TO MAKE
Prepare sauce by mixing in all the ingredients in a glass and set aside.
Prepare the batter by mixing in all the ingredients into another glass or a bowl.
Cut your chicken into bite size pieces. Dip each piece into the batter.
Heat a pan with a pretty amount of oil. Ideally a deep one not to get burnt like who I was.
Deep fry in batches the chicken until it gets a beautiful golden color. About 4/5 minutes. Do it in batches… the chicken comes out beautifully.
Drain the chicken on paper towers.
Use a another pan or wok and put in a little oil. Once it’s heated, add in the garlic, onions and chili…. until everything mixes well.
Add the honey sauce mixture and bring it to a simmer. Once the sauce tickens, add in the chicken and toss it until it coats with the sauce.Sprinkle with sesame seeds and green onions.
Serve immediately
